Brown-Butter Maple Blueberry Muffins



Total time: ~40 minutes

Baking time: 20-30 minutes

Makes: 12


Ingredients:

  • 1/2 cup of butter

  • 1/2 cup sugar

  • 1/3 cup maple syrup

  • 2 eggs

  • 1 tsp vanilla extract

  • 1/2 cup whole milk

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp cinnamon

  • 1 1/2 cup of blueberries

  • 2 tbsp of sugar for top

  • zest of one lemon for top


Directions:

  • Pre-heat oven to 375F

  • Melt butter in a sauce pan on medium-low heat. Once melted, swirl the pot around constantly to avoid burning the milk solids. The milk solids will be a medium brown and will smell nutty when ready.

  • Let the butter cool completely, you can even stir in one or two ice cubes to speed up the process.

  • Mix together sugar, maple syrup and vanilla in a bowl, then add the butter once it's cooled.

  • Add in the eggs and milk.

  • Then add in all of the dry ingredients.

  • Fold in blueberries.

  • Fill mufin tins and top with a sugar and lemon zest mix.

  • Bake for 20-30 minutes or until toothpick comes out clean.
