Ingredients:
1/2 cup of butter
1/2 cup sugar
1/3 cup maple syrup
2 eggs
1 tsp vanilla extract
1/2 cup whole milk
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 1/2 cup of blueberries
2 tbsp of sugar for top
zest of one lemon for top
Directions:
Pre-heat oven to 375F
Melt butter in a sauce pan on medium-low heat. Once melted, swirl the pot around constantly to avoid burning the milk solids. The milk solids will be a medium brown and will smell nutty when ready.
Let the butter cool completely, you can even stir in one or two ice cubes to speed up the process.
Mix together sugar, maple syrup and vanilla in a bowl, then add the butter once it's cooled.
Add in the eggs and milk.
Then add in all of the dry ingredients.
Fold in blueberries.
Fill mufin tins and top with a sugar and lemon zest mix.
Bake for 20-30 minutes or until toothpick comes out clean.
